This banana bread may just be my favourite breakfast food! A warm, moist and fragrant baked delight, comfort food for most Sunday sleep-ins. While it may be tempting to conveniently pour some cereal instead, I found this recipe (via Home Cooking Adventure) relatively easy to handle and one of the best ones I’ve discovered so far!
Home-Baked Banana Bread:
Ingredients:
- 3 or 4 ripe bananas, makes about 1 and 1/4 cup or 300g of puree (ripe bananas are the best for making banana bread!)
- 1 cup (125g) flour
- 2 tsp (8g) baking powder
- 1/4 tsp (2g) baking soda
- 1/4 tsp (2g) salt
- 1 tsp (3g) cinnamon powder
- 1 stick (113g) butter, room temperature
- 3/4 cup (150g) sugar
- 2 eggs
- 1/3 cup (70g) sour cream
- 1 tsp (5g) vanilla extract
- 3/4 cup (75g) walnuts, chopped
Directions:
- Mash up your bananas in a bowl.
- Mix flour, baking powder, baking soda, salt and cinnamon powder in a separate bowl till they’re evenly distributed.
- In another bowl, add the butter and sugar and mix until creamy.
- Add the eggs, sour cream, vanilla extract and mashed bananas to the butter bowl in order, incorporating them into the mixture one at a time.
- Mix until well incorporated.
- On low speed, incorporate the dry ingredients – the flour mixture.
- Add the cup of chopped walnuts into the mixture and stir.
- Lightly grease your loaf pan.
- Line the bottom with parchment paper.
- Pour the mixture in and make it even with a spatula or a spoon.
- Sprinkle chopped walnuts on top.
- Bake in the preheated 180˚C oven for about 50-60 minutes until golden brown and a toothpick inserted into the centre comes out clean.
- Remove from oven. Let the bread cool in the pan for 10 minutes.
- Invert on a wire pan and serve!
